๐ฅ Honest Review of Baehongdong Kkal-Bibim-myeon – A Chewy Noodle Twist with a Spicy Kick!
A bold blend of pear, red pepper, and dongchimi in one intense bowl
Hello everyone! Today, I’m excited to share my review of a new convenience store find that caught my eye – Nongshim’s Baehongdong Kkal-Bibim-myeon. As a self-proclaimed bibim-myeon (spicy cold noodles) enthusiast who already loves the original Baehongdong version, I was instantly curious about this new “Kkal-Bibim” variant and had to give it a try.
๐ Purchase & Packaging
I picked this up at CU convenience store during a 2+1 promo. Priced around 1,800 KRW per pack, it’s slightly pricier than regular instant noodles, but after seeing the contents, I understood why.
Inside the box:
-
1 pack of wide, knife-cut style dried noodles
-
Special Baehongdong bibim sauce
-
Kimchi-flavored crispy toppings
Right away, the kal-guksu (knife-cut noodle) style stood out. The noodles are much thicker and flatter than regular bibim-myeon, giving off a more premium feel.
๐ Cooking & First Impressions
Cooking is super easy – just boil the noodles for about 4 minutes and 30 seconds, rinse them in cold water, drain, mix in the sauce, and finish with the crispy toppings.
With my first bite, I thought, “Wait... this is pretty good!” Unlike the usual thin noodles, these were chewy, bouncy, and had a nice bite. The sauce also felt spicier and richer compared to the original Baehongdong version.
๐ถ️ Sauce Flavor – More Heat than Sweet
While the original Baehongdong bibim-myeon balances sweetness from pear and tanginess from dongchimi, this version leans more toward a bold, spicy flavor.
If you’re sensitive to heat, you might find it a bit much. Even I – someone who doesn’t handle spice too well – found it intense but manageable.
The crispy kimchi-flavored toppings added bursts of texture and a nutty flavor. They may not be for everyone, but I personally liked the added crunch.
Just a tip: eat them quickly – they lose crispiness over time. But don’t worry too much; they hold their texture well while eating.
Overall, they added a playful new texture that made the experience even more enjoyable.
✅ Highlights
-
Chewy, bouncy noodles: Knife-cut style noodles give a thicker, more satisfying bite than regular bibim noodles.
-
Rich, spicy sauce: The sauce offers a bold combination of spice and subtle sweetness.
-
Fun crispy topping: Kimchi-flavored crisps give it a unique texture and flavor contrast.
❗ Downsides
-
No spice level options: Might be too spicy for those sensitive to heat.
-
Topping texture changes over time: They may get soggy if left too long.
-
Heavier noodle texture: Feels more like a full meal than a light snack; some might find it too dense compared to standard instant bibim-myeon.
๐ Final Thoughts
If classic bibim noodles feel like a quick, casual meal, Baehongdong Kkal-Bibim-myeon is more like a hearty, spicy cold knife-cut noodle dish. It really reminded me how much noodle texture affects the overall taste.
Personally, I love pairing bibim noodles with grilled pork belly. This time, I tried it with grilled sliced pork shoulder (mok-sal), and it was a perfect match! The fat from the meat balanced the spice beautifully.
๐ I highly recommend pairing this noodle with lean grilled pork shoulder for a complete and satisfying meal.
Whether you’re a fan of spicy food or just looking to switch up your usual bibim-myeon, this is a bold and exciting choice. It could easily double as a savory snack or a beer companion. And on hot summer days? Serve it extra cold – it’s incredibly refreshing.
Looking forward to trying more new noodle inventions next time and sharing my thoughts! ๐
